Sweet Potato Casserole















There are so many ways to prepare sweet potatoes at Thanksgiving time, but this recipe has been requested over and over from me when I made Thanksgiving dinner in the UK.  Loaded with marshmallows inside and out, these potatoes won't last long at your Thanksgiving dinner.

Ingredients:

7-8 medium sized sweet potatoes (2 1/2 - 3 lbs), cooked and peeled, and mashed
1/2 c. brown sugar
1/4 tsp. salt
1/2 tsp. cinnamon
1 egg, beaten
4 tbsp. melted butter
1 - 10 oz pkg. marshmallows

Method:












Add all ingredients except marshmallows, to mashed up cooked, peeled sweet potatoes.













Beat together well until mixture is smooth.













Butter baking dish. Place 1/2 of mixture in dish. Dot with marshmallows.













Then add remaining mixture. Bake at 350 degrees for 30 minutes.

Remove from oven, dot top with marshmallows and replace in oven about 10 minutes or until brown.
