What's For Dinner?

It's only taken me 9 months but I've finally been able to get a little control of my life in at least one area and start doing my meal planning again.  I figured with baby coming in a mere 9 weeks, I better start getting organized again.

What's for Dinner?

Okay...I've shifted my menu making days for later in the week for some reason as it's more convenient for me not to go grocery shopping oh so neat and nicely on Monday mornings....so here is what I decided today that we'll be having for the next week or so....

  • Pork loin chops coated with the new Kraft Fresh Take - Cheese, bacon and herbs, twice baked mashed potatoes, my last bag of sweet corn I froze last fall, and last bag of homemade applesauce
  • Braised BBQ pork, fried rice, chow mein
  • Hamburgers, baked beans, creamy potato salad (hotdogs for the kiddos), raw veggies with dill dip
  • Grilled tilapia (we'll see how that works), seafood stuffed mushrooms, broccoli salad
  • Marinated chicken kabobs (red bell peppers are on sale this week!!!!)
  • Bacon wrapped chicken breasts on the grill, potato salad, watergate salad (for dessert)
(Here is what we had earlier in the week as I didn't plan well and made what I had stuff in the pantry to make....this time change thing has really thrown me for a loop with it being lighter longer....
  • Angel chicken pasta, garlic toast, steamed broccoli and carrots
  • Chicken parmesan Melts, roasted potatoes, fruit
  • Made homemade Avanti's bread (will post recipe later) and made salami, ham and pepperoni sandwiches with Sunchips and fruit
  • ate out at Cracker Barrel last night - I needed a break in the middle of the week from cooking :-)

Here's what's on our dinner menu this week:
  • Roast chicken, mashed potatoes, corn
  • General Tso's chicken with broccoli and carrots with rice and chow mien 
  • Bock Mac and Cheese (trying to find a copy of Granite City's recipe)
  • Baked tilapia, sweet potatoes, peas
  • Corned beef and cabbage, boiled potatoes and carrots
  • Venison loins, garlic mashed potatoes
  • Clam chowder and cheesy biscuits (again...I didn't get to make this last week and I'm still craving it)

What's for Dinner?

This is the big week...we are moving houses so meals towards the end of the week are going to be convenient and big enough for my moving crew!!!

  • Breakfast for dinner - eggs benedict for mom and dad, scrambled eggs and toast for kiddos
  • Valentines Day Dinner - Chicken alfredo, steamed veggies, garlic bread (For dessert: no-bake cherry cheesecake, heatshaped sugar cookies for dessert, and chocolate covered strawberries!!!)
  • Alice Springs Chicken, broccoli salad, baked potato
  • Homemade fish sticks, sweet potato fries, cole slaw
  • Spiral ham, hashbrown casserole, corn
  • BBQ beef sandwiches, potato salad, baked beans

Well.....this is what we had for dinner this week...spent lots of time sorting out last minute house building things and getting ready for a birthday today!!!


  • Chicken quesadillas, taco dip, and Mexican rice
  • Creamy clam chowder with crescent rolls
  • Homemade chicken strips, spinach balls, corn
  • Pork cutlets, roast potatoes, green bean casserole
  • Homemade fish sticks, sweet potato fries, peas

  • Enchiladas, cheese quesadillas for kiddos
  • Baked tilapia, sweet potato fries, cole slaw
  • Braised pork, fried rice, spring rolls
  • Sweet and sour chicken, chow mien, rice
  • Chili with grilled cheese sandwiches
  • Chicken parmesan melts, butter parsley potatoes, corn
  • Smoked pork ribs, baked potatoes, veggie (breaking out the new smoker I got the hubby for Christmas)

What's for Dinner?

This week I let each person in our family pick a meal to have each night this week.  I told the kids they had to pick a meat and a vegetable and then I took it from there. This is what they came up with:


  • My daughter picked chicken and carrots, so I'm making - Italian Herb Chicken and I'll cook some carrots in with it in the crock pot
  • My son picked pork and corn, so I'm making - Center cut pork loin medallions, corn, mashed potatoes, applesauce
  • My husband picked lasagna so we'll do that with some garlic bread and steamed broccoli
  • I picked clam chowder, homemade rolls

The rest of the days we'll have:

  • Baked tilapia, baked potatoes, peas
  • Parmesan chicken melts, broccoli salad

Yeah...it's Tuesday and I went grocery shopping without a meal plan and I feel so inept but from what I picked up, this is what we are having this week:


  • Fried chicken legs/thighs, mashed potatoes, gravy, baked beans
  • Beef stew (didn't get to have this last week)
  • Pork chops, wild rice mix, broccoli (didn't get to have this last week)
  • Stir fried beef with sesame sauce, chow mien, rice
  • Chicken parmesan melts, cole slaw, baked potatoes
  • Angel chicken pasta, steamed broccoli

  • Porkchops, wild rice mix, applesauce

Last week was crazy as I baked and baked all week to get ready for Christmas and was very impromptu on what I made for dinner as it totally relied on what I felt like at 4PM each day.

This week I'm back on track and this is what we are having for dinner:

  • Baked tilapia, baked potatoes, and peas
  • Alice Springs chicken, ranch potatoes and broccoli salad
  • Pork chops, sweet potatoes, apple sauce

Recuperating from 3 Thanksgiving Dinners this year so we are going light this week with our dinner menu:


  • Chili, crab salad
  • Pork chops, apple sauce, steamed broccoli
  • Chicken and wild rice soup
  • Roast chicken with roast vegetables and roast potatoes
  • Pork stir fry with chow mien, fried rice
  • Tortellini with mushrooms and Bolognese sauce, breadsticks

I'm working on clearing up space in my freezer this week, because after Thanksgiving I need room to start storing Christmas cookies!!!!


  • Spaghetti, peas, and biscuits
  • Brown sugar glazed salmon, broccoli salad, baked potatoes
  • Chicken, mushrooms and ravioli with alfredo sauce and garlic bread
  • Meatballs, twice baked mashed potatoes, green beans
  • Sweet and sour chicken, spring rolls, fried rice
  • Bangers and mash with onion gravy, corn
  • Mini Thanksgiving dinner to treat some of our British friends here in the US!!!

My Family's 50 Favorite Meals

I always love trying new recipes but each week during my meal planning I fall back on some of family's favorite meals to fill in the rest of the days.  I've actually been able to come up with a list of 50 of my family's favorite meals. When planning out my weekly meals it's nice to have a list of family favorites to refer back to when I need inspired on what to make for dinner each week.

What's for Dinner?

Let's make some heat this week with the cool fall weather approaching!!!  I've been starting to incorporate quite a few more "healthy" options in our weekly meals.  I've been reading loads of new health conscience cookbooks and wanting to try a few new recipes.
  • Chicken, vegetable and barley soup (new recipe)
  • Pork stir fry over rice
  • Shrimp scampi with roasted vegetables - squash, zucchini, mushrooms, and red pepper (new recipe)
  • Baked chicken parmesan on vegetable pasta with steamed broccoli (new recipe)
  • Baked tilapia, wild rice mix, glazed carrots (new recipe)
  • BBQ chicken stromboli, green beans
  • Lemon and thyme roasted chicken, mashed potatoes, corn

As fall is approaching, I go from summer salads and grilling to warm comfort foods.  The weather is getting cooler so planning meals to warm up my kitchen are making their way back into our weekly menu.

  • Braised roast pork, rice and stir fry vegetables
  • Chicken wild rice soup and homemade bread
  • Meatloaf, steamed vegetables, corn bread
  • Chicken and Broccoli over rice (new recipe from my cousin-in-law Jenny!!!)
  • Crockpot beef roast with potatoes and carrots
  • Chicken tetrazinni (another new recipe from Jenny!!!)
