2 chicken breasts, boneless and skinless
1 Tbsp honey
1 Tsp mustard
4 slices bacon
2 large fresh mushrooms
sliced colby jack cheese (UK - I use Red Leicester)
Mix together honey and mustard. Marinade chicken for 1 hour.
Bake chicken breasts at 350 F/ 180 C for 25 minutes. While chicken is baking, fry up the bacon and the mushrooms.
Layer the mushrooms on the chicken breast, then the bacon and then a few slices of cheese. Put the chicken back in the oven until the cheese melts (about 3-5 minutes).
