Peanut Butter Christmas Mice













My daughter picked this new cookie for me to try this year. She's only three and thought these were the cutest cookies. She and my one year old son thoroughly enjoy eating them as well.














Ingredients:
1 cup creamy peanut butter
1/2 cup butter (no substitutes), softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/2 cup peanut halves
2 Tbsp green and red M&M miniature baking bits
4 tsp miniature chocolate chips
60-66 pieces of red shoestring licorice (2 inches each)

Method:

In a large mixing bowl, cream peanut butter, butter, sugar and brown sugar. Beat in eg and vanilla. Combine the flour and baking soda; gradually and to the creamed mixture. Refrgerate for 1 hour or until easy to handle.














Roll into 1 inch balls. Place 2 inches apart on ungreased baking sheets. Pinch each ball at one end to taper.














Add one M&M for nose and two chocolate chips for eyes. Insert two peanut halves into center for each ball for ears.














Bake at 350 F/180C for 8-10 minutes or until set. Gently insert one licorice piece into each warm cookie for tail.














Remove to wire racks to cool completely.

Yields: 4-5 dozen
