Pumpkin Bars with Cream Cheese Frosting














The classic pumpkin bar with cream cheese frosting is an essential component to Halloween and/or Thanksgiving celebrations. I usually like to make these in a jelly roll pan but I had to leave mine in the States as it would not fit in my British oven, so a 9x13 inch pan worked out just fine (just a bit taller bars.) Also the cream cheese in England is a bit softer than American so I would suggest to increase the amount of cream cheese and icing sugar a bit to thicken up the frosting.

Ingredients:
4 eggs
1 cup oil
2 cups sugar
2 cups pumpkin
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp baking soda (bicarbonate of soda)

Frosting:
3 oz cream cheese
1 tsp vanilla
6 Tbsp butter
1 Tbsp milk
1 3/4 cup powdered sugar (icing sugar)

Method:

Mix eggs, oil, sugar, and pumpkin in large bowl. Sift dry ingredients and add to pumpkin mixture. Mix well and pour into a greased and floured 9x13 inch pan. Bake at 350 F/180 C for 22-25 minutes. Spread frosting on cooled bars. Makes 24 bars.
