South Beach Peanut Butter Cookies














Yes, you can eat cookies while on a diet. These tasty little treats look good, taste good and are in line with the South Beach Diet's Phase 1.

Ingredients:
1 cup peanut butter
1 cup Splenda granular (or another sugar substitute)
1 egg

Method:
Preheat oven to 350 degres. Mix the three ingredients thoroughly. Drop by spoonfuls on a cookie sheet. Dip a fork in Splenda and press gently on top of cookie. Bake for 10 minutes. Remove from pan carefully after cooling slightly.

Makes 16 - 1 1/2" cookies.

***Note: 1 cookie = 1 snack
