These peppers absolutely amazing and full of great flavor. I liked using red, yellow, and orange peppers to make sure they had a hint of sweet taste to them. They are very healthy for you, but they taste great and are quick and easy to make.
4 bell peppers
olive oil
1/2 lb ground turkey
1 stalk celery, chopped with top
1-2 garlic cloves, minced
1 small onion, chopped
1 tsp dried parsley
1 tablespoon worcestershire sauce
1 teaspoon all purpose seasoning
2 small peeled tomatoes, diced
1/2 cup shredded cheese (or more)
salt and pepper
Method:
olive oil

Method:
Wash the peppers, cut the tops off, and place in oiled glass dish. Cover and microwave the peppers for 5 minutes.
Saute the veggies and ground turkey with a dollop of olive oil. (I chop up the usable remainders of the pepper tops as well). Add the tomatoes and cook for 3-4 minutes to evaporate some of the liquid.
I sprinkled some cheese in the bottom of the pepper shells.
Bake at 350 for 10 minutes or until the peppers are soft and the cheese is toasted.
