Birthday Rice Krispy Treats













Rice Krispy treats are always a favorite with kids young and old and for my daughter's princess party I wanted to find a fun way to make this traditional snack. I found the idea on the Rice Krispies website, but modified it to use my mini muffin pans to make dainty little Rice Krispy cakes. The original recipe calls for you to fill the cups with ice cream or frozen yogurt but I opted to use a bit of frosting squeezed in them so I could have them all done and ready to go before the party started.

Ingredients:
3 Tbsp butter or margarine
1 pkg of large marshmallows (10 oz, about 40) or 4 cups of mini marshmallows
6 cups Rice Krispies or Cocoa Krispies
food coloring
Pudding, ice cream, frozen yogurt, or frosting for filling

Method:













In a large saucepan melt butter over low heat.













Add marshmallows.












Stir until completely melted. Add food coloring if desired at this point. Remove from heat.












Add Rice Krispies cereal and stir until well coated.












Divide mixture into 16 - 2 1/2 inch muffin-pan cups or 56 mini muffin-pan cups coated with cooking spray. Shape mixture into individual cups ( I needed to rub butter or cooking spray on my fingers to help form the cups).



















Cool. Remove from pans and store in air tight container until you are ready to serve. Before serving fill with pudding, ice cream, frozen yogurt or frosting then serve immediately. If you use frosting, you can frost them in advance and store in container until ready to serve.

***Note: For microwaving instructions, use a microwave safe bowl to heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth then add the Rice Krispies and follow the rest of the instructions above.
