Healthy Blueberry Muffins













I love blueberry muffins and I found this recipe on a South Beach recipe page, but they are really good and healthy for you too. I like to heat them up in the microwave and put a small pat of "I Can't Believe it's Not Butter Light" spread on them.

Ingredients:













1 1/2 cup whole wheat pastry flour
2 tsp baking powder
½ tsp salt
1 egg or ¼ cup egg substitute
1/3 cup skim milk
1/3 cup plain yogurt
2 Tbsp canola oil
1/3 cup Splenda
1 cup fresh blueberries or any other berries

Method:

Preheat oven to 350F/180C. Lightly coat 12 muffin pan with cooking spray.













In a large bowl, combine flour, baking powder and salt and in medium bowl, combine egg, milk, yogurt, and oil. Add 1/3 cup Splenda and mix well.













Pour egg mixture into dry ingredients, and stir until all ingredients are moistened. Add fruit and stir until just mixed.













Place just less than ¼ cup of batter in each muffin cup. Bake 15 to 20 minutes or
until muffins are golden and wooden pick inserted in center comes out clean.

***Note: Theses muffins are allowed during Phase 2 of the South Beach Diet.
