These are my most favorite Christmas cookies ever!!!! I've been making these scrumptious goodies since I was 10 years old and I almost have them perfected now. I did import the Brach's Chocolate Stars from the US to make them this year, but in the UK Cadbury's Chocolate Buttons work just as well. They freeze really well to make these tasty treats last the whole Christmas season.
Ingredients:
1 cup sugar + extra for rolling dough balls in
1 cup packed brown sugar
1 cup smooth peanut butter
1 cup butter
2 eggs
1/4 cup milk
2 tsp vanilla
3 1/2 cups flour
2 tsp baking soda (bicarbonate of soda)
1 tsp salt
Method:
Cream together sugars, peanut butter and butter. Beat in eggs, milk and vanilla. Mix together flour, soda, and salt and gradually add into peanut butter mixture. Chill dough for 1 hour.
Roll dough into 1 inch balls then roll balls in a bowl of sugar. Preheat oven to 375 F /190 C and bake for 10-12 minutes.
Immediately place chocolate stars (or Buttons) in the middle of each cookie and press down slightly. Move cookies to cooling rack and allow the chocolate to re-harden before putting in storage container.
